Caribbean Shrimp w/ Rice & Beans

With red pepper salsa, pineapple, & mango

Ingredients

Red Pepper Salsa
  • 1 red bell pepper, roughly chopped
  • ¼ a large red onion, roughly chopped
  • 1 mini cucumber, roughly chopped
  • 1 Tbsp. red wine vinegar
  • ¼ c. fresh cilantro
  • 1 – 2 tsps. red chili paste, like Sambal Oelek
Rice & Beans
  • 1 medium mango, cubed
  • 1 can (15 oz.) no-salt, organic, black beans, drained and rinsed well
  • 1 can (15 oz.) pineapple chunks, drained and rinsed well
  • ½ c. red pepper salsa
  • 2 c. cooked rice (Cooked per package instructions)
Shrimp
  • 1 red bell pepper, chopped
  • 2 tsps. chopped garlic
  • 1 – 2 tsps. jerk seasoning
    • Or, 1:1 Cajun or fajita seasoning to Chinese five-spice mix
  • ½ lb. fresh or frozen, uncooked, peeled and deveined shrimp (med. size shrimp)
  • 2 green onions, chopped
  • 1 medium avocado, cubed

To Make Red Pepper Salsared_peppers_chopped

  1. Put bell pepper, cucumber, and onion chunks in a food processor and blend or pulse until finely chopped.
  2. Add vinegar, chili paste (1-2 tsps. to taste), and cilantro, and pulse until cilantro and chili paste is chopped and evenly distributed.red-onions-chopped
  3. Take out ½ cup for cooking and save any extra for chips, etc.

 

To Make Beans & RiceMango-sliced

  1. Combine mango, beans, pineapple chunks, ½ c. salsa in a medium sauce pan. Heat on medium low to low heat ’til cooked through.
  2. Reduce to simmer while making the shrimp.pineapple_chunks
  3. Warm up cooked rice (in microwave or in a medium pot on medium-low heat with a Tsbp. of water) if needed.
  4. Place warmed rice in a large bowl.

To Make Shrimp

  1. Coat a medium to large saute pan with a thin layer of brushed on olive or vegetable oil or coat with cooking spray and heat on medium high heat.cooked_shrimp
  2. Add chopped red bell pepper to pan and saute until it starts to brown a little, just a couple of minutes.
  3. Add garlic and spices.
  4. Add shrimp and cook until opaque and pink, stirring occasionally.
  5. Pour bean mixture over rice in a large bowl and stir to combineavocado-cubes.
  6. Pour shrimp mixture over that and toss.
  7. Cube avocado and sprinkle avocado chunks and green onions over the top.

Serve immediately, with hot sauce if desired.
